A really GOOD cookie recipe!

I made these last weekend, and thought that they came out really yummy and they are easy to make! They are quite buttery, which is probably why I like them so much! :)

Chocolate Chip Shortbread Cookies

2 C flour
pinch of salt
1/2 lb butter, softened
1/3 C packed brown sugar
1/3 C sugar
3/4 tsp vanilla extract
1 C chocolate chips

Preheat oven to 325. Mix flour and salt together. Set aside. In a separate bowl, mix butter, sugars and vanilla with a mixer until smooth. Reduce speed and add flour in three batches, beating just until blended. Stir in chocolate chips.

Press dough evenly in bottom of an ungreased, 9x13 cake pan. Bake until golden brown and firm, about 45 minutes. Let cool for about 10 minutes before cutting.

Recipe Tag!

And for anyone who might be on the Weight Watchers diet, I have the points already figured out on the first two because these are recipes I use often. :)











Pizza Casserole

(from Taste of Home – makes TWO casseroles)

3 C uncooked spiral pasta
2 lbs ground turkey
1 medium onion, chopped
2 sm cans mushrooms (or use fresh)
1 (15oz) can tomato sauce
1 (14oz) jar pizza sauce
1 (6oz) can tomato paste
½ tsp sugar
½ tsp garlic powder
½ tsp onion powder
½ tsp oregano
4 C shredded mozzarella
1 pkg turkey pepperoni
½ C parmesan cheese

Cook ground turkey with onion; drain. Add mushrooms, sauces, tomato paste and all seasonings. Let simmer for 10-15 minutes. Meanwhile, cook pasta. Once pasta is cooked, mix with sauce. Preheat oven to 350. Divide half of the mixture between two greased casserole dishes. Layer with cheese and pepperoni. (Can use other pizza tops.)Top with the other half of the noodle mix and the rest of the cheese. Top with parmesan and bake covered, 20 minutes. Uncover and bake an additional 10-15 minutes.

Creamy Black Bean Salsa Chicken


4 large chicken breasts, skinless and boneless
1 C water
1 chicken bouillon cube
1 C salsa (any type)
1 can yellow corn, drained
2 cans black beans, drained
¼ - ½ C taco seasoning
1 C light sour cream
1 ½ C shredded cheddar

Put all ingredients in crock pot, except for sour cream and cheese. Cook on low for 6 hours or more, shredding chicken during the cooking process. Shortly before serving, stir in sour cream and cheese. Serve with tortillas, or over tortilla chips or rice.

Easy Chunky Chocolate Cookies


1 pkg dark chocolate fudge cake mix
2 eggs
½ C butter, melted
¼ C brown sugar, packed
1 tsp vanilla extract
1 C chocolate chips
½ C chopped nuts-optional

Preheat oven to 350. Stir cake mix, eggs, butter, brown sugar and vanilla together with a spoon until blended. Stir in chocolate chips and nuts, if desired. Drop onto a greased cookie sheet and bake for about 12 minutes. Cookies will still be puffy. Cool 2 minutes on baking sheet and then remove to wire rack to cool.

Snickerdoodles


We love to make snickerdoodles and Christmas is a perfect excuse to make some! For a fun holiday twist, add green and red sprinkles to your sugar and cinnamon mix. When you roll the cookies in this, they will bake up looking quite festive!

I'm not even going to post the recipe here b/c it's one of the most well loved cookies in America! :o)

Another good recipe!


Here's another easy recipe! I found this one in a Kraft Foods magazine. It's a low fat version, and my family loved it! I used whole wheat fettuccine noodles, and you can add some chopped chicken if you like! Enjoy!

Easy Fettuccini Alfredo

16 oz fettuccini noodles ~ 6 Tbsp parmesan cheese

2 ½ C chicken bouillon ~ ½ tsp ground nutmeg

8 tsp flour ~ ¼ tsp pepper

2/3 C Neufchatel cheese ~ 2 Tbsp parsley

¼ tsp garlic powder


~Cook pasta. Combine broth and flour in a large pan, stir in neufchatel, garlic powder, parmesan, nutmeg, pepper and parsley. Cook stirring with a wire whisk until mixture boils and thickens. Toss sauce with cooked pasta and serve.

Recipe


I've always enjoyed Stef's recipes, so I'll post one of my own! I found this recipe while at my parents' house, and it was a hit with everyone!


Ortega Fiesta Bake

2 lbs ground beef (I used ground turkey)
1 C chopped onion
1 1/2 C salsa
1 1/2 pkg taco seasoning
1/2 C water
1 can corn, drained
2 small cans sliced olives, drained
2 pkg corn muffin mix
2 C shredded cheddar cheese
1 large can (7 oz) diced green chilies (I used a 4oz can to make it less spicy)
  • Preheat oven to 350. Cook beef and onion. Stir in salsa, taco seasoning and water and cook over low heat for 5-6 minutes or until mixture is thickened. Stir in corn and olives. Spoon into greased 9x13 pan.
  • Prepare batter for corn muffins according to package directions. Stir in cheese and chilies. Spread over mixture in pan. Bake for 30-35 minutes or until topping is done.
Makes a nice, large casserole that easily will serve 8-10 people. Serve with sour cream if desired.
