First Day of School



Today was our first day of school...hard to believe the summer is already over!

Nathan is in 11th grade, Tim is in 9th. So, two high schoolers! Dan is in 5th grade and Lizzy is in 2nd. Full layout of grades here! :)

Also pictured is my new school "cupboard" that Kenny made for me (with a little help from a friend). It is GREAT...he did a wonderful job and it holds all of our stuff in one convenient place. We'll eventually put doors on the outside, but for now it's functional as is. :)

For Stef - Breakfast!

Here is a yummy recipe for breakfast that Stef requested from me, so I thought I'd post it here for everyone else to enjoy too!


French Toast Casserole

8 slices sourdough bread

12 oz Neufchatel cheese, cut into little pieces

1/3 C pancake syrup

2 C skim milk

12 eggs

cinnamon, cloves and vanilla

Spray 9x13 pan with non-stick spray. Tear bread into cubes and spread ½ on the bottom of pan. Top with Neufchatel cheese and then the other half of the bread. Mix remaining ingredients together and pour over bread. Cover and chill overnight.

Bake at 375 for about 45 minutes. Let stand before serving. Serve with warm pancake syrup or sprinkle with powdered sugar (or both!)



*NOTE - you can use regular cream cheese and any type of milk (2%, 1%..whatever) too. :)

Summer...

...is almost over! Doesn't seem possible, but it's true. Next week we'll be starting school, and I am almost done getting things organized. I like to get things all planned out early in the school year, and although it takes me a long time now, it will save me lots of time later on! I'm more excited about getting us all back on a schedule. The kids are starting to get that "idle boredom" that comes at the end of having a long time with nothing structured.

I found a great site that has lots of planning calendars, schedules etc. It's called www.donnayoung.org. Just FYI for any others who like that organizational sort of thing!

Kenny is making me a closet for our school books and supplies. It's in the dining room, right next to our dining room/school table. It's almost done, and I'm really excited to have a place to store everything that will be 'out of sight' when not needed.

Nothing much else is new, but I figured a boring post is better than no post at all. :)

Anniversary


Today is our 19th wedding anniversary! We celebrated in Dana Point about 10 days ago, so nothing special going on today, other than enjoying each other and our family. :o)

Time goes by so quickly...yet it seems like a long time ago that I was getting ready for our wedding. Six moves, four children and 19 years later, we still love each other, more today than we did on that day 19 years ago. God has been good to bless us with many wonderful memories, and He has been good to bring us through many trials. Lord willing, we'll have at least another 19 years together!

Overdue update!

It's already Saturday, and I'm overdue for an update of our week! Unfortunately, I can't upload any pictures right now, but hopefully I can do that soon.

We've had a fun week at my parents' house in La Habra. I was able to meet up with some old friends that I hadn't seen in 10-15 years...these are ladies that I used to work with and a couple of them were in our wedding! That was really fun, and we hope to try to get together again next summer.

The kids and I have enjoyed swimming almost every day! Some good friends of my parents graciously let us use their pool when we're down here.

Kenny returned yesterday and he and I are currently in Dana Point at a lovely bed and breakfast on the coast. We're celebrating our 19th anniversary!

The only downside to our trip has been the van troubles. Unfortunately our NEW transmission (that we just replaced in November) is having troubles again. It started on Weds. evening, and is currently at a Dodge dealer to be repaired. Thankfully we have a place to stay (thanks Mom and Dad) although we might be wearing out our welcome! :o)
