
This is so yummy...and so "fall-ish!"
Pumpkin Roll
1 tsp baking soda
½ tsp nutmeg
¾ C flour
3 eggs
1 tsp baking powder
1 C sugar
½ tsp salt
2/3 C canned pumpkin
1 tsp cinnamon
1 tsp lemon juice
Preheat oven to 375; grease and flour a jelly roll pan. Mix all dry ingredients in a small bowl. In a larger bowl, beat eggs, until thick. Beat in sugar. Stir in pumpkin and lemon juice and fold in dry ingredients. Pour into prepared pan and bake 12-15 minutes. Loosen edges immediately and flip onto a towel covered with powdered sugar. Roll up towel and cake together and allow to cool. Unroll cake and spread with filling; re-roll and sprinkle with powdered sugar. Cover and chill for several hours before serving.
Filling
¼ C butter, softened
8 oz cream cheese, softened
1 tsp vanilla
1 C powdered sugar
~Blend all in gradients; spread on cooled cake.
